Classic Vegetable Soup (V)
This tomato based vegetable soup is quick and easy to make. Lentils and peas make this a very hearty lunch or dinner for the whole family.
Vegan. Serves 6.
INSTANT POT: Combine ingredients with liquid in pot, seal the lid and use the soup setting for 14 minutes.
CROCK-POT: Combine ingredients with liquid in the crock-pot, cover with lid and cook on HIGH for 4 to 6 hours.
NOTE: Add 1/2 lb. of leftover cooked ground beef or diced roast beef while cooking.
